Meatloaf Sliders

Mini Meatloaf Sliders with Spinach and PureBaked Mashed Potato

Serves 12-20

Ingredients
1 teaspoon olive oil
7 button mushrooms, chopped
1/2 sweet yellow onion, diced
3 (yellow, red, orange) small baby bell peppers, diced
3 cloves of garlic, minced
1 pound lean ground turkey
2 tablespoons garlic and herb bread crumbs
1-2 teaspoons milk
1 egg
3 tablespoons parsley, chopped
Sea salt and freshly cracked pepper, to taste
Fresh spinach

Preparation

1. Preheat the oven to 350˚ F. Coat a muffin tray with cooking spray.

2. Heat the olive oil in a skillet over medium heat. Add the mushrooms, onions, and red pepper for 5-7 minutes or until softened; add the minced garlic and cook, stirring constantly for 1 minute. Combine the mushroom mixture with the ground turkey, breadcrumbs, milk, egg, and parsley together in a bowl until well combined.

3. Scoop the meatloaf mixture evenly into the muffin tray, pushing down to flatten the meatloaf into the tray. Place in the oven and bake for 25-30 minutes or until the turkey is cooked through.

4. While the meatloaf is baking, make the roasted garlic mashed potatoes (roast the garlic ahead of time). See recipe below.

5. Right before you take the meatloaf out of the oven, wash the spinach and place in a skillet over medium heat. Cook the spinach with a touch of water, making sure to season with sea salt and freshly cracked pepper, to taste, for 1-2 minutes.

6. Remove the turkey meatloaf muffins from tin, add wilted spinach on top of the meat then spoon mashed potatoes on top of the spinach and sprinkle with chives.

Serve immediately. Enjoy.

Roasted Garlic Mashed Potatoes

Ingredients
2 pounds PureBaked mashed potatoes
Oven roasted garlic cloves
Salt and Pepper to taste
Chives, chopped

Preparation
To roast the garlic, take head of garlic and slice top off to expose cloves. Rub cloves with olive oil and place in 350 F. oven until soft (approximately 25 minutes). Remove and puree with 2 tablespoons olive oil.
 
Mix roasted garlic puree into 2 pounds of prepared PureBaked mashed potatoes. Salt and pepper to taste. Keep warm.
