Pimento Cheese Potato Skins

Ingredients

  • 6 – #7 Baked Split Potato Skins
  • 4 oz – Cream Cheese
  • 1 cup – Mayo
  • 1 cup – Shredded Cheese
  • 1 tbsp – Pimentos
  • 1 tsp – Salt
  • 1 tsp – Pepper
  • Chopped chives (optional)

Directions

Add cream cheese and mayonnaise into a bowl and mix. Once that is mixed, add in the shredded cheese, pimentos, and salt & pepper and stir. Take baked potato skins and put a scoop of pimento cheese mixture on each skin. Broil until the cheese is melting and the skins are crispy. Sprinkle with chives if desired.
